* 2 lb. (3 med.) sweet potatoes, unpeeled
* 1 c. (6 oz.) pitted California dried plums
* 1 Tbsp. vegetable oil, plus extra for oiling baking dish
* 3/4 c. freshly squeezed orange juice
* 1 Tbsp. honey
* 1 Tbsp. orange zest
* 1/2 tsp. salt
* 1/4 tsp. cinnamon
* 4 tsp. chopped crystallized ginger
1. Heat oven to 350°F. Cut each sweet potato into 4 wedges, lengthwise; cut each wedge in half across.
2. Place sweet potatoes and dried plums in lightly oiled baking dish large enough to hold potatoes in one layer.
3. In small bowl, whisk together orange juice, honey, oil, zest, salt and cinnamon; pour evenly over sweet potatoes and prunes. Sprinkle with ginger.
4. Cover with foil; bake for 45 min. Increase oven temperature to 425°F.
5. Remove foil; baste sweet potatoes with juices from baking dish. Bake about 10 min. or until sweet potatoes are tender and glazed.
