* 1 smoked sausage (about 1 lb.), split lengthwise
* 1 tsp. vegetable oil
* 1/2 c. (3 oz.) smoked ham, diced
* 1/2 c. chopped onion
* 1 garlic clove, minced
* 1/4 tsp. hot pepper sauce
* 1/8 tsp. black pepper
* 2 c. chicken broth
* 1 c. long-grained rice
* 1/2 tsp. salt
* 1 med. tomato, diced
* 1 16-oz. can red beans, drained
1. Broil or grill sausage until browned, keep warm.
2. Meanwhile, in a large, deep skillet with tight-fitting lid, sauté ham, onion and garlic in oil until lightly browned, about 2-4 min. Stir in all remaining ingredients and bring to a boil. Lower heat, cover and simmer until rice is tender, about 15-20 min. Serve immediately with grilled sausage.
