Egg Salad Pizza Cones

Ingredients
1/4 c. lowfat creamy Italian dressing
1/2 tsp. Italian seasoning, crushed
6 hard-cooked eggs, chopped
1/4 c. green onions (with tops), sliced
1/4 c. pepperoni, minced
6 plain ice cream cones
mushrooms, chopped
green peppers, chopped
black ripe olives, chopped
3/4 c. pizza sauce
2 Tbsp. Parmesan cheese, grated

Directions:

1. In medium bowl, stir together dressing and seasoning. Stir in eggs, onions and pepperoni. Cover and refrigerate until ready to serve.

2. To serve, scoop about 1/3 c. of the mixture into each cone. Top with about 2 Tbsp. pizza sauce and mushrooms, peppers and olives as desired. Sprinkle each with about 1 tsp. cheese.
