Candied Red Grapefruit Rind

| 1 c. water |
| 2 c. honey |
| peel from 1 grapefruit (red if possible), cut into 1/4 in. thick pieces |
| 1 c. granulated sugar |
Directions:
1. Combine water and honey in a saucepan. Simmer over medium
heat. Add grapefruit pieces, simmer for 40 min. Remove from
heat and let grapefruit sit in honey syrup for at least 1 hr. or
overnight. Remove strips from syrup and roll in sugar. Store in an
airtight container for 1 week.
